Automation of the Kvass Production Process – Fermentation Line

The project involved the full automation of a kvass production line, with a focus on controlling the preparation, fermentation, and conditioning stages of the beverage. The technological process was digitalized through the implementation of an industrial PLC, which coordinates process sequences, monitors critical parameters, and ensures repeatability of each batch.

Sensors for temperature, level, and pressure were installed, along with automated valves and electronically controlled pumps, enabling precise management of the process flow. The system ensures temperature control during fermentation, holding times, heat exchange, and inter-stage transfers, eliminating uncontrolled variations that could affect the final product quality.

Through the HMI interface, operators can monitor process status, select different recipes, review fermentation history, and quickly intervene in case of deviations. Automation resulted in high process stability, consistent kvass quality, and reduced manual operation time.

The solution implemented at Cogâlnic Brewery increased production capacity, improved food safety, and integrated the fermentation line into a modern control infrastructure, ready for future expansion and SCADA integration.
